Initially we have to test the beans in small batches for their taste and quality. After then receiving the sacks of beans we hand sort, roast, crack, winnow, grind, temper and mould the chocolate before finally wrapping the bars. It's not an easy or quick process - far from it - but we think the results are worth it.
