65% Papua New Guinea Dark Chocolate with Chilli & Lime

The Markham River valley is a wide, sparsely populated area of Papua New Guinea. Markham Organic Cocoa organizes exports for smallholder cocoa and coffee farmers in the area. The producers cultivate organic cocoa by default    but are not certified by an official body. There are 35 small fermentaries to which these  farmers are affiliated. The chocolate has a medium body with strong notes of fruit and oak wood with slight vanilla  and a strong nutty finish but little bitterness. We add the fresh taste of lime oil and compliment this with the mild heat of chilli
