65% Papua New Guinea Dark Chocolate with White Mulberries

The Markham River valley is a wide, sparsely populated area of Papua New Guinea. Markham Organic Cocoa organizes exports for smallholder cocoa and coffee farmers in the area. The producers cultivate organic cocoa by default  but are not certified by an official body. There are 35 small fermentaries to which these farmers are affiliated. The chocolate has a medium body with strong notes of fruit and oak wood with slight vanilla  and  a strong nutty finish but little bitterness.  We include organic, sun dried white mulberries from Turkey into the bar. They are soft, sweet  and rich in Vitamins C  and K, iron, potassium and calcium
