These cocoa beans are supplied by El Ceibo, a cooperative founded in 1977, El Ceibo brings together more than 1200 small producers dedicated to the cultivation of organic cocoa in the Alto Beni region of the country. The group is dedicated to improving the livelihoods of its associates. The resulting chocolate has strong flavours of cocoa and acidity but little bitterness. Flowery notes begin to develop into pineapple and red fruit and finish with nuts and wood. As well as whole milk powder we add malted barley to give this chocolate a distinctive, malty taste.
